When Jill & Seaton's son, Forrest, stopped walking, talking, and began falling asleep mid-meal, her world turned upside down. “He looked like a ghost of himself—pale, frail, and trapped in a body that wouldn’t thrive,” she recalls. Doctors were baffled, and the family’s days became a blur of ER visits and hospital quarantines. But in 1991, after weeks of uncertainty, a gastroenterologist finally saw what others missed: Forrest’s “classic case” of celiac disease.
One of the most touching moments came when our son asked if there was any way he could enjoy Grandma’s warm oatmeal cookies, her apple crisp, and her famous no-bake cookies for the first time. That simple wish inspired us to dive into research and experimentation. Together, we developed our first purity protocol process for gluten-free oats, making it possible for him to safely enjoy those cherished family treats. Seeing his joy was a powerful reminder that this work could help many others living with celiac disease.
